Ingredients
1 deep dish pie crust
5 Medium tomatoes, skinned, seeded, chopped
1 tbsp Brown sugar
1 tsp dry Basil
½ Onion, chopped
¾ cup Mayo
1 cup Shredded Cheddar Cheese
1 cup Shredded Swiss Cheese
Directions
- Bake pie crust at 400° for 9 minutes, then let cool.
- Combine tomatoes, brown sugar, basil, and onion in a bowl and set aside for 15-20 minutes to let juice form.
- While juice is forming, in a bowl mix the mayo and cheese.
- Drain juice, and place in pie crust.
- On top of the tomatoes, spread the mayo and cheese mixture.
- Bake at 400° for 20 min.
- Let rest for several minutes before serving.
