Ingredients
- 1 pint grape tomatoes (cut in half) OR 2-3 medium slicing tomatoes diced
- 5-6 chub cucumbers sliced or diced
- ½ red onion thinly sliced (feel free to exclude if not a fan of onions)
- 2 tsp dill
- 2 tsp parsley
- 2 tablespoons avocado oil
- 2 tablespoons red wine vinegar
- Pinch of salt and pepper
Directions
- Place all ingredients in a bowl and mix together.
- Refrigerate 30-60 minutes before serving.
