Lemon Garlic Butter Shrimp & Asparagus

This is a "one-pan" meal that is light, keto-friendly, and incredibly flavorful.

Prep time: 10 mins | Cook time: 20 mins | Serves: 3-4

Ingredients

  • 1 lb fresh asparagus
  • 1 lb bag shrimp
  • 2 tbsp butter
  • 2 tbsp olive oil
  • ½ lemon
  • Optional: red pepper flakes and fresh parsley

Instructions

  • The Prep: Snap the woody ends off the asparagus and peel a few cloves of garlic.
  • The Cook: Sauté shrimp in olive oil and butter for 2 minutes per side. Remove them, then toss the asparagus into the same pan with garlic and red pepper flakes. Cook for 4–5 minutes until crisp-tender.
  • The Finish: Add the shrimp back in, squeeze half a lemon over everything, and garnish with fresh parsley.
  • Serve with: Quinoa, crusty bread, or eat it as-is for a low-carb meal.
