Rhubarb acts much like a lemon or vinegar in savory dishes. Its acidity cuts through fat in meats perfectly. This pan-sear method takes about 25 minutes.

Ingredients
- 2 chicken breasts (sliced thin)
- 1 cup chopped rhubarb
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp soy sauce
- Splash of water
Directions
- Season chicken with salt and pepper; sear in a pan with olive oil until golden and cooked through. Remove chicken from the pan.
- In the same pan, toss in the rhubarb, honey, soy sauce, and a splash of water.
- Cook, tossing occasionally, until crisp tender.
- Simmer for 5–7 minutes until the rhubarb breaks down into a thick, jammy sauce.
- Add the chicken back in to coat. Serve over rice or couscous.
