Honey-Rhubarb Glazed Chicken

Rhubarb acts much like a lemon or vinegar in savory dishes. Its acidity cuts through fat in meats perfectly. This pan-sear method takes about 25 minutes.

Prep time: 5 minutes | Cook time: 25 minutes | Serves: 4

Ingredients

  • 2 chicken breasts (sliced thin)
  • 1 cup chopped rhubarb
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • Splash of water

Directions

  1. Season chicken with salt and pepper; sear in a pan with olive oil until golden and cooked through. Remove chicken from the pan.
  2. In the same pan, toss in the rhubarb, honey, soy sauce, and a splash of water.
  3. Cook, tossing occasionally, until crisp tender.
  4. Simmer for 5–7 minutes until the rhubarb breaks down into a thick, jammy sauce.
  5. Add the chicken back in to coat. Serve over rice or couscous.
