This light and tasty meal is an unexpected twist using some standard summertime dinner favorites!
Prep time: 10 minutes | Cook time: 20 minutes | Serves: 4-6
Ingredients
- 1 lb pasta: spaghetti or linguine work best
- 1 lb fresh asparagus
- 6 strips of bacon
- ¼ cup parmesan cheese
- 2 eggs
Instructions
- The Prep: Boil water for pasta. Chop bacon and slice asparagus into thin diagonal coins.
- The Cook: While the pasta boils, fry the bacon until crisp. Add the asparagus to the bacon fat for the last 3 minutes of cooking.
- The Sauce: Whisk 2 eggs and 1/2 cup Parmesan in a small bowl.
- The Finish: Drain the pasta (reserve a splash of water). Toss the hot pasta into the bacon/asparagus pan, remove from heat, and quickly stir in the egg mixture. The residual heat creates a creamy sauce without scrambling the eggs.
