15-Minute Rhubarb Compote

If you just want a quick treat, making a stovetop compote is the fastest way to transform rhubarb. We call this the "Universal Topping! You can use it to top yogurt, oatmeal, or vanilla ice cream. Pro Tip: Add a pinch of cinnamon or some grated ginger for extra depth.

Prep time: 5 minutes | Cook time: 15 minutes

Ingredients

  • 3 cups chopped rhubarb
  • 1/3 cup sugar (or maple syrup)
  • 1 tsp vanilla extract

Directions

  1. Combine rhubarb and sugar in a small saucepan over medium heat.
  2. Cover and cook for about 8–10 minutes, stirring occasionally. The rhubarb will release its own juices and soften.
  3. Once it looks like a chunky sauce, stir in the vanilla and turn off the heat.
