Ingredients
- 6 Peppers, assorted colors
- 1 cup ground meat, your choice (beef, pork, chicken, sausage variety)
- 1 med Onion, diced
- 2 cups Shredded Cheddar or Monterey Jack Cheese
- 1 cup Panko
- 2 tbsp Butter
Directions
- Leave the stem on & cut the pepper lengthwise.
- Remove seeds and prepare to stuff.
- Choose your ground meat and brown in a skillet.
- Mix with finely diced onion, cooking until onions are soft.
- Spoon meat and onion mixture into pepper and top with favorite shredded cheese.
- Bake at 350° for 20-25 min or until soft.
- While peppers are baking, in a small pan sautee butter and lightly toast the panko.
- Once peppers are done, remove from oven and top with buttered panko and place back in the oven for 3-5 minutes until golden brown.
Notes: Serve on a bed of your favorite rice for a complete meal.
