Ingredients
- 16oz. Pasta of your choice (penne, spaghetti, rigatoni)
- 3 tbsp olive oil
- 1 pint Untiedt’s Grape Tomatoes
- 1 diced zucchini
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp thyme
- 1 tsp oregano
- ½ cup fresh chopped basil
- 1 cup feta or parmesan cheese
Directions
- Cook your pasta of choice, according to the directions on the package. Reserve 1 cup of pasta water.
- In a large skillet, heat 1 tbsp of olive oil and add diced zucchini and grape tomatoes along with a dash of salt. Cook until the tomato skins begin to brown and blister.
- Once tomatoes and zucchini are done, add the cooked pasta, remaining 2 tbsp of olive oil, spices, and ¼ cup of the reserved pasta water (you can add more if needed). Mix all together.
- Place into large serving bowl and add fresh basil and the cheese of your choosing. Mix together and serve!
