Ingredients
- 1 medium to large spaghetti squash
- 2 tbsp olive oil
- 2 cups spaghetti sauce
- ½ lb Italian Sausage
- ½ diced onion
- 1 diced green pepper
- 1 cup mushrooms (fresh or canned)
- 1 tbsp Italian seasoning
- 1 cup shredded mozzarella cheese.
Directions
- Preheat oven to 400F and line baking sheet with tinfoil.
- Cut spaghetti squash in half lengthwise and remove seeds.
- Take 1 tbsp olive oil and cut the flesh of the squash with it. Place squash flesh side down on baking sheet and bake for 40 minutes.
- While squash is baking, brown Italian Sausage and then add the onion, green pepper, mushrooms, and Italian seasoning. Cook until vegetables are soft.
- Once the meat and vegetable mixture is cooked, add spaghetti sauce to the pan and mix together.
- Remove squash from the oven after 40 minutes and flip over so flesh side is facing up. Fill with the meat and vegetable mixture. Keep squash on the baking sheet, cover with tinfoil and bake for 15-20 minutes.
- Remove foil, add mozzarella cheese and place back in the oven for 5-10 minutes until cheese is melted.
