Ingredients
- 4 slices bacon, cut in 1 inch pieces
- 1/2 cup diced onion
- 2 lbs asparagus, trimmed and cut into 1 inch pieces
- 3 tsp dijon mustard
- Coarse salt & ground pepper
- Parsley to garnish
Directions
- In a large skillet, cook bacon over medium, stirring occasionally, until browned and crisp.
- With a slotted spoon, transfer the bacon to paper towels to drain.
- Add asparagus and onion to pan, season with salt and pepper.
- Cook, stirring occasionally, until asparagus is tender.
- Remove from heat and stir in bacon and mustard, sprinkle with parsley to garnish.
