Sauteed Asparagus with Bacon


  • 4 slices bacon, cut in 1 inch pieces
  • 1/2 cup diced onion
  • 2 lbs asparagus, trimmed and cut into 1 inch pieces
  • 3 tsp dijon mustard
  • Coarse salt & ground pepper
  • Parsley to garnish



  1. In a large skillet, cook bacon over medium, stirring occasionally, until browned and crisp.
  2. With a slotted spoon, transfer the bacon to paper towels to drain.
  3. Add asparagus and onion to pan, season with salt and pepper.
  4. Cook, stirring occasionally, until asparagus is tender.
  5. Remove from heat and stir in bacon and mustard, sprinkle with parsley to garnish.
