Roasted Tomatillo and Garlic Salsa


  • 6 tomatillos, husked
  • 1 bulb garlic, separated and peeled
  • 2 Jalapenos
  • fresh cilantro
  • ½ cup water, or as needed
  • salt and pepper



  1. Preheat the oven's broiler.
  2. Arrange the whole cloves of garlic, tomatillos, and jalapenos on a baking sheet.
  3. Place under the broiler, and cook for a 4-5 minutes.
  4. Remove garlic cloves as soon as they are toasted, to avoid developing a bitter flavor.
  5. Continue to roast jalapenos and tomatillos until evenly charred, turning occasionally.
  6. Set aside to cool.
  7. Don’t remove the charred parts of the tomatillos or the pepper. They add a great flavor to the salsa.
  8. Place peppers and tomatillos in a blender with the garlic and cilantro.
  9. Add a little water to the mixture iff necessary to facilitate blending.
  10. Season with salt and pepper to taste.
  11. Refrigerate until serving.
