Roasted Pumpkin Seeds

Ingredients

  • 1 pie pumpkin
  • Olive oil
  • Your favorite seasonings (garlic powder, chili powder, salt, pepper, cayenne, etc.)

Instructions

  1. Cut the top off the pumpkin and remove all the ‘guts’, trying to separate the seeds from the stringy insides.
  2. Place the seeds in a strainer and rinse them off with cold water as best as possible. You want them as free from the stringy insides as possible.
  3. Once fairly clean, place the seeds in a pot of salted water and bring to a boil for 5 minutes. After 5 minutes, dump the seeds in the strainer once again and run under cold water to rinse off one last time.
  4. Pour the seeds onto a clean kitchen towel and pat as dry as possible. Once fairly dry, transfer the seeds to a baking sheet. Toss in a light coating of olive oil and your favorite seasonings. (Garlic powder, chili powder, salt, pepper, or cayenne are great options.)
  5. Bake at 350 degrees for about 25 minutes, stirring occasionally. Once roasted to your desired crispness, remove from the oven and remove from the baking sheet so the seeds don’t continue to cook.

Make sure to store in an airtight container!
