Refrigerator Pickles

Ingredients

  • 8 cups Unpeeled cucumbers, thinly sliced
  • 1 cup Onion, sliced
  • 3 tbsp Canning salt
  • 2 ½ cup Vinegar
  • 3 ½ cup Sugar
  • 1 tsp Tumeric
  • 1 tsp Mustard Seed
  • 1 tsp Celery Seed

 

Directions

  1. Combine first 3 ingredients, let stand 2 hours or overnight.
  2. Rinse and Drain.
  3. Bring last 5 ingredients to a boil.
  4. In a large bowl, pour boiling liquid over rinsed cucumbers and onions, let cool.
  5. Store in an ice cream pail, or in canning jars with lids.
  6. Place in refrigerator.
