Honey Glazed Roasted Carrots


  • 1 pound carrots, peeled and cut in half lengthwise
  • 1 tablespoon olive oil
  • 2 tablespoons melted butter
  • 3 tablespoons honey
  • Coarse Salt
  • Black Pepper


  1. Preheat oven to 400F. 
  2. Toss carrots in olive oil and place on a rimmed baking sheet. 
  3. Bake in preheated oven for 20-25 minutes. 
  4. While carrots are baking, whisk together the melted butter and honey. 
  5. Remove carrots from oven once tender and pour the melted butter and honey over the top. Toss carrots to ensure they are coated.
  6. Serve with a sprinkle of coarse salt and a dash of pepper.
