Prep time: 15 mins. | Cook time: Approx. 10 mins. | Serves: As many or as few freezer bags as you'd like, we recommend 1-2 cups per bag.
This recipe can easily be doubled, tripled, or quadrupled.
Ingredients
- 12-14 ears of Fresh Untiedt's Sweet Corn
- 1 tbsp salt
- 1 tbsp sugar
- 2 cups water
- Freezer bags
Directions
- Husk all the sweet corn, making sure all the silks are removed from the corn cobs.
- Cut the corn kernels off of the cob using a serrated knife or a corn cob-dekerneler and place the kernels in a large bowl.
- Once you have removed all the kernels from the corn, sprinkle the salt and sugar over the kernels and mix well.
- Pour the corn mixture into a large stock pot and pour 2 cups of water over the top, mix together. Place a cover over the top and turn the stove to med-high heat.
- Bring the pot to a boil. Once it reaches a boil, remove the top and let boil for 5 minutes, stirring occasionally.
- Remove from the heat immediately at 5 minutes, pouring the corn into a shallow dish to cool. You don't want the kernels to continue cooking. Let the corn cool completely before placing your desired amount into freezer bags.
- Make sure you remove all the air from the freezer bags before sealing. Place in the freezer. The corn should be good for up to one year.
To use frozen sweet corn:
- Thaw by placing a bag of frozen corn in warm water.
- Heat up in the microwave or in a pot on the stove. Serve with a bit of butter, salt and pepper.
- You can use frozen corn in soups, stews, chilis, salsa, or a variety of other recipes throughout the winter months.
