Ingredients
- 1lb italian sausage
- 1 onion
- 5 carrots
- 5 celery ribs
- 2 tsp dried oregano
- 2 tsp dried basil
- 6 cups chicken broth
- 2 cup water
- ¾ cup orzo pasta
- 1 28 oz can of diced tomatoes
- 1 bunch of chopped kale
Directions
- Dice onion, carrots, and celery. Set aside.
- In frying pan, brown the Italian sausage. When the sausage is close to being done, add the onion, carrots, celery, spices and cook until soft. Depending on how greasy the sausage is, sometimes it is good to pour mixture onto paper towel to soak up extra grease before transferring it to the stock pot.
- While the sausage, onions, carrots, and celery are cooking, add the chicken broth, water, diced tomatoes, and orzo to the stock pot and bring to a boil.
- Once boiling, reduce to a simmer and add in the sausage and vegetable mixture. Once mixed, add in chopped kale and simmer for 10 minutes and serve. Add salt and pepper to taste.
