Ingredients
- 1 Delicata squash
- 1 tbsp avocado oil
- 1 tsp cinnamon
- 1 tsp brown sugar
- ½ tsp ground ginger
- ½ tsp nutmeg
Directions
- Preheat oven to 400 F. Line a baking sheet with tinfoil.
- Cut delicata squash in half lengthwise. Remove the seeds with a kitchen spoon.
- Cut the squash in half lengthwise again and then into ½” size pieces.
- Place pieces in a mixing bowl and add remaining ingredients. Toss together, ensuring the squash is coated in oil and spices.
- Spread the squash out on the baking sheet in a single layer and bake for 35-40 minutes. Timing does depend on the size and moisture of the squash. Halfway through, use a spatula and flip the pieces over.
- The squash is done when you can mash a piece with a fork.
