Roasted Cinnamon Delicata Squash


  • 1 Delicata squash
  • 1 tbsp avocado oil
  • 1 tsp cinnamon
  • 1 tsp brown sugar
  • ½ tsp ground ginger
  • ½ tsp nutmeg


  1. Preheat oven to 400 F. Line a baking sheet with tinfoil.
  2. Cut delicata squash in half lengthwise. Remove the seeds with a kitchen spoon.
  3. Cut the squash in half lengthwise again and then into ½” size pieces.
  4. Place pieces in a mixing bowl and add remaining ingredients. Toss together, ensuring the squash is coated in oil and spices.
  5. Spread the squash out on the baking sheet in a single layer and bake for 35-40 minutes. Timing does depend on the size and moisture of the squash. Halfway through, use a spatula and flip the pieces over.
  6. The squash is done when you can mash a piece with a fork.
