Roasted Asparagus Salad


  • 1 lb Fresh Asparagus
  • 1 med Onion, thinly sliced
  • 2 med Tomatoes, chopped or 1 cup sliced grape tomatoes
  • 3 Tbsp Italian Salad Dressing



  1. Roast asparagus, cool, cut in diagonal slices.
  2. Combine asparagus with tomato and onion in a medium bowl.
  3. Drizzle with Italian Salad Dressing, stirring gently. 
  4. Cover and refrigerator several hours before serving. 
  5. Stir before serving. Enjoy!
