- 2 Red Slicing Tomatoes
- 4 Heirloom Tomatoes, various kinds like Mr. Stripey, Green Zebra, or Brandywine
- ¼ cup capers
- 2 tbsp butter
- Fresh shaved Parmesan Cheese
- Olive oil
- 1 lemon
Instructions
- Use a very sharp knife (or a mandoline) to slice the tomatoes into paper-thin rounds.
- Arrange tomatoes in a single layer on a large platter.
- In a small frying pan, add butter and capers. Fry capers until slightly crisped, about 5-7 minutes.
