Quick Tomato Carpaccio

This elegant, thin-sliced appetizer highlights the visual beauty of different tomato varieties. The thinness of the slices changes the mouthfeel, making the tomato feel buttery and delicate.

Ingredients

  • 2 Red Slicing Tomatoes
  • 4 Heirloom Tomatoes, various kinds like Mr. Stripey, Green Zebra, or Brandywine
  • ¼ cup capers
  • 2 tbsp butter
  • Fresh shaved Parmesan Cheese
  • Olive oil
  • 1 lemon

Instructions

  1. Use a very sharp knife (or a mandoline) to slice the tomatoes into paper-thin rounds.
  2. Arrange tomatoes in a single layer on a large platter.
  3. In a small frying pan, add butter and capers. Fry capers until slightly crisped, about 5-7 minutes.
  4. Top the tomatoes with fried capers, a sprinkling of freshly shaved Parmesan cheese, a squeeze of fresh lemon juice, and a drizzle of olive oil.
