This colorful and vibrant summertime treat showcases the unique flavors of heirlooms by pairing them with herbs and a crisp, flaky pastry crust.

Ingredients
- 1 sheet puff pastry (Pepperidge Farms works great)
- 3-4 Heirloom tomatoes: the more varieties, the better!
- 6 oz. Feta cheese
- Salt & pepper
- Balsamic Glaze
- Fresh herbs (basil and thyme work great)
Instructions
- Preheat the oven to 400 degrees F.
- Roll out puff pastry and place on a baking sheet.
- Thinly slice the heirloom tomatoes.
- Pinch the sides of the puff pastry to make it look almost like a pie crust, but in rectangular form.
- Poke the puff pastry with a fork, over and over again
- Place slices of heirloom tomatoes on the puff pastry, covering all of the pastry.
- Sprinkle with salt & pepper.
- Sprinkle the tomatoes with the feta cheese.
- Chop the fresh herbs.
- Sprinkle the tart with fresh herbs.
- Place in the preheated oven and bake for 22-25 minutes, or until the crust is golden brown.
- Remove from oven and drizzle with balsamic glaze. Enjoy!
