Curried Grilled Eggplant

Prep time: 5-10 mins. | Cook time: 10-15 mins. | Serves: 4-5



  • 2 Medium eggplants, or 1 large, cut crosswise into 1” thick rounds
  • ¼ cup sesame oil
  • 2 tbsp curry powder
  • Pinch of salt
  • Fresh ground pepper
  • 3 tbsp chopped fresh mint leaves


  1. Rub eggplant rounds on both sides with sesame oil.
  2. Sprinkle with curry powder, salt and pepper.
  3. Grill until slightly charred, about 6 minutes per side.
  4. Sprinkle with mint to serve.
