Prep time: 5-10 mins. | Cook time: 10-15 mins. | Serves: 4-5 Ingredients 2 Medium eggplants, or 1 large, cut crosswise into 1” thick rounds ¼ cup sesame oil 2 tbsp curry powder Pinch of salt Fresh ground pepper 3 tbsp chopped fresh mint leaves Directions Rub eggplant rounds on both sides with sesame oil. Sprinkle with curry powder, salt and pepper. Grill until slightly charred, about 6 minutes per side. Sprinkle with mint to serve.
