Serves: 4-6
Ingredients
- 1 large head of cauliflower or 2 small heads, cut into bite size pieces
- 5 slices bacon
- 4 oz. cream cheese (room temperature)
- 1 ½ cup shredded cheddar cheese
- 3 scallions thinly sliced (white and green parts only)
- ½ cup sour cream
- Salt and pepper
Directions
- Preheat oven to 425 degrees.
- Cut bacon into small pieces and cook in skillet over medium heat. Make sure to stir occasionally so the bacon doesn’t burn. Cook until brown and crispy. Once cooked, place the cooked bacon on a plate lined with a paper towel. Reserve 2 tbsp bacon grease and discard the remaining grease.
- Place the cauliflower in a 8×8 or 9×9 baking dish. Drizzle the bacon grease over the cauliflower and mix together. Sprinkle with a dash of salt and pepper. Bake for 25-30 minutes, until cauliflower is soft.
- While cauliflower is baking, in a medium bowl, mix together the cream cheese and 1 cup of cheddar cheese.
- When cauliflower is done cooking, remove from oven and drop the cream cheese mixture over the top of the casserole in small dollops. Sprinkle the remaining ½ cup of cheddar cheese over the top and place dish back in the oven for 8 minutes or until cheese is completely melted.
- Remove from oven and dollop the sour cream evenly over the top of the cheese covered cauliflower. Sprinkle with the bacon bits and scallions for a delicious twist on loaded baked potatoes!
