Turban Squash

Turban squash is an eye-catching variety that is part centerpiece and part autumn delicacy. This heirloom variety looks like a colorful little turban perched on top of a larger pumpkin, and it tastes just as unique as it looks.

Vibrant bands of orange, dark green, and creamy white make it an incredible natural centerpiece before it ever hits the kitchen counter. The flesh is yellow, dry, and floury with a subtle, nutty sweetness similar to hazelnut or acorn squash. Because of its unique, sturdy structure, turban squash is often hollowed out to serve stews, Bisques, or fondue inside its shell.

Because the rind is bumpy and thick, don't try peeling it raw. Roast it whole or halved, then scoop out the tender flesh for purees, curries, or baking.

Slice the top off, scoop out the seeds, roast the whole squash, and use the shell as a stunning edible serving bowl for autumn soups or chili!

Store in a cool, dry, dark place at around 50 degrees, but make sure they do not freeze. Under the best conditions, they should keep for 3-4 months. They get sweeter in storage as the starch converts to sugar. Once cut, you can wrap them in plastic and store them in the refrigerator for 5 to 7 days.

To freeze, simply cook squash and mash or puree it. Then pour it into ice cube trays and freeze. Pop the frozen cubes into freezer Ziplock bags.
