Shallots

Shallots are a type of onion that are small and elongated. With a much milder flavor than onions and a slight hint of garlic, shallots make a great substitute for either! Shallots can be added to a stir-fry, minced and mixed in with a salad dressing, or added to a marinade for meat.

Sold by the pound at farm stands. Typically available from late July through September.

Remove the outer layer like you would on an onion.

Keep shallots in a cool, dry, and dark place with plenty of air circulation. It is best to keep on a counter or in a storage pantry.

To freeze, prepare as if you are going to use them. Mince or slice into small pieces. Store in a Freezer Ziplock bag, removing as much air as possible. Place in freezer for up to 10 months. When you thaw, they will lose their crunch, but will be perfect for stir-fry, soups, or adding to a marinade.
