The perfect summertime salad! Great to serve alongside burgers, for an afternoon snack, or truly a meal on its own. Enjoy!

Ingredients

  • 1 pint grape tomatoes (cut in half) OR 2-3 medium slicing tomatoes diced
  • 5-6 chub cucumbers sliced or diced
  • ½ red onion thinly sliced
    (feel free to exclude if not a fan of onions)
  • 2 tsp dill
  • 2 tsp parsley
  • 2 tablespoons avocado oil
  • 2 tablespoons red wine vinegar
  • Pinch of salt and pepper

Directions

  1. Place all ingredients in a bowl and mix together.
  2. Refrigerate 30-60 minutes before serving.
