Serves: 5-6

A quick and easy dinner on those busy summer evenings. This is a great vegetarian meal alone, but you can always add grilled chicken or serve alongside any type of beef or seafood as well.


  • 16oz. Pasta of your choice
    (penne, spaghetti, rigatoni)
  • 3 tbsp olive oil
  • 1 pint Untiedt’s Grape Tomatoes
  • 1 diced zucchini
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1 tsp oregano
  • ½ cup fresh chopped basil
  • 1 cup feta or parmesan cheese


  1. Cook your pasta of choice, according to the directions on the package. Reserve 1 cup of pasta water. 
  2. In a large skillet, heat 1 tbsp of olive oil and add diced zucchini and grape tomatoes along with a dash of salt. Cook until the tomato skins begin to brown and blister. 
  3. Once tomatoes and zucchini are done, add the cooked pasta, remaining 2 tbsp of olive oil, spices, and ¼ cup of the reserved pasta water (you can add more if needed). Mix all together. 
  4. Place into large serving bowl and add fresh basil and the cheese of your choosing. Mix together and serve!
