A quick and easy side dish that is delicious when served alongside grilled chicken, fish, or even mixed together with pasta.


  • 1 tbsp avocado OR olive oil
  • 1 clove minced garlic OR 2 tsp garlic powder
  • 1 onion thinly sliced
  • 3 medium zucchinis sliced
  • 2 medium tomatoes diced OR 1 can diced tomatoes (14.5oz)
  • 1 tbsp Italian seasoning


  1. Heat olive oil and garlic in large frying pan. Cook the onion for about 5-6 minutes until soft, then add the zucchini and fresh tomatoes and cook for another 10 minutes or until zucchini is tender.
    Important: Don’t add canned tomatoes yet if using canned diced tomatoes. 
  2. Once onions and zucchini are cooked, add in canned tomatoes and cook for 5-7 minutes. If you used fresh tomatoes, finish the dish by adding the italian seasoning.
