Craving mashed potatoes, but looking for something a little lighter in calories? Give this mashed rutabaga recipe a try. It doesn’t disappoint.

Ingredients

  • 3-4 medium rutabagas
    peeled and chopped into chunks
  • ½ cup sour cream
  • 1 tbsp butter
  • 2 tbsp fresh dill
    chopped
  • 1 tbsp fresh chives
    chopped
  • Salt
  • Pepper

Directions

  1. Place the rutabagas in a large stock pot, covering with cold water. Add a pinch of salt and boil until the rutabagas are fork tender, just like a potato. 
  2. Once cooked, drain and return the rutabagas back to the pot. 
  3. Keep the stove on low and begin to mash the rutabagas with a potato masher. Once the rutabagas are to a consistency you enjoy, add the butter, sour cream, fresh dill, and a dash of a salt and pepper. Gently mash, mixing all the ingredients together. 
  4. Serve with freshly chopped chives.
