Ingredients

  • ¼ cup extra virgin olive oil
  • 1 small red onion
    halved and thinly sliced
  • 1/3 cup red wine vinegar
  • 1 tbsp sugar
  • 6 medium zucchini
    thinly sliced
  • salt & pepper

Directions

  1. In a large skillet, heat oil over medium-high.
  2. Add onion and sauté until translucent, about 3 minutes.
  3. Add vinegar and sugar and season with salt & pepper.
  4. Transfer to a non-reactive bowl. Add zucchini and toss.
  5. Let marinate at room temperature for 30 minutes.
  6. To store, cover and refrigerate up to 8 hours.
