Bring on squash season! With so many varieties to try, having an abundance of recipes is a must. This recipe gives flair to the traditional acorn squash.

Ingredients

  • 1 acorn squash
  • 3 tbsp avocado oil
  • 2 tbsp brown sugar
  • 2 tsp sriracha sauce
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 4 oz. crumbled feta cheese
  • 1 tbsp basil (fresh if possible)
  • 1 tbsp fresh cilantro
  • ½ tbsp dried oregano

Directions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Cut Acorn squash in half, removing the seeds. Once cleaned, continue to slice the squash into thick slices and place in a large bowl.
  3. In a small bowl, mix the siracha, minced garlic, brown sugar and avocado oil.
  4. Pour the sauce from the small bowl over the squash. Toss so the squash is coated. 
  5. Place the squash on the lined baking sheet.
  6. Bake for 20 minutes, flip the squash, then bake another 20 minutes.
  7. While the squash is baking, mix the salt, pepper, herbs and feta cheese together.
  8. When the squash is done, sprinkle with the herbed cheese topping and serve immediately.
