Grilling is a healthy way to prepare zucchini and summer squash! Retain all the flavor without adding a lot of fat.
Try adding seasonings and you have a quick and easy side for tonight’s dinner. Oregano, thyme, or a pre-made seasoning mix works well!
Ingredients
- 2 tbsp. honey
- 2 tbsp. olive oil
- 1 medium zucchini
- 1 medium summer squash
- 1 large onion (optional)
Directions
- Preheat grill for medium-high heat.
- Cut off the stem end of the zucchini and squash, and slice into spears.
- Mix honey and olive oil in bowl, then toss spears in the mixture.
- Grill 3-5 minutes until tender.
Note: You can also cut zucchini and squash into chunks, add onion slices, mix with honey/olive oil, and put in tinfoil to grill.
