Fresh, homegrown radishes offer a much different taste than store bought radishes. Crunchy and mild, radishes are perfect for adding to salads or enjoying raw. This garlic roasted radish recipe is a great way to bring out the sweetness that can sometimes be overpowered by the peppery kick radishes are typically known for.
Ingredients
- 1 bunch fresh red radishes
stems removed, end trimmed, and cut in half - 1 tbsp avocado or olive oil
- 1 tsp salt
- 1 tsp garlic powder
- ½ tsp pepper
- 1 tsp dried dill
- 2 finely minced garlic cloves
- Ranch dressing
optional for dipping or drizzling over the top
Directions
- Preheat oven to 425 degrees.
- In a medium mixing bowl, combine the radishes, oil, salt, garlic powder, pepper, and dill. Mix together to ensure all radishes are coated evenly.
- Transfer radishes to a 9×13 baking dish. Do NOT add the garlic yet.
- Bake for 10 minutes. At 10 minutes, remove from oven and add the minced garlic and toss, ensuring the garlic is mixed with all the radishes. Place pan back in oven and bake for another 15 minutes, tossing occasionally.
- Radishes are done when they turn golden brown or they can easily be pierced with a fork.
- Serve the radishes warm, drizzled with a bit of ranch dressing. Enjoy!
